Freshly washed cherry tomatoes and basil
Bite size tomato, basil and fresh mozzarella skewers
My favorite co-hostess was in town this weekend and we had a gathering at my place. I'll take any excuse to make appetizers and Saturday night was no exception. Together we made these skewers, a ham and cheese puff (that was pulled out of the oven just when our friends were arriving), and sweet roasted red pepper hummus (recipe here). These skewers looked so pretty in a circle on a plate, and were Christmas-y without even trying.
Caprese Skewers
Ingredients
20 cherry tomatoes
20 fresh basil leaves
1 tub fresh mozzarella in mini balls
10 bamboo skewers, broken in half
Balsalmic vinegar for drizzling
Directions
Break the skewers in half and add:
1 tomato (punch the skewer right through the middle so you can't tell where the top was)
1 basil leaf
1 ball fresh mozzarella
Arrange the 20 skewers on a plate and drizzle with balsalmic vinegar
