Egg White Frittata with Smoked Salmon and Arugula

On Sunday I hosted a brunch with the girls and wanted to have an egg dish but didn't want to serve scrambled eggs, so I made a frittata. Even though this was my first frittata, when all was said and done it slid right out of the pan, was able to be cut into perfectly portioned pieces, and everyone loved it! If you've never made a frittata before, try this one. It takes less than 30 minutes and the smoked salmon and arugula make it fancy and rich with flavor and color. Also, the recipe is so simple that I think I could make it again off the top of my head!




Egg White Frittata with Lox and Arugula



Ingredients

8 egg whites, at room temperature (take the eggs out of the fridge at least 2 hours before you start cooking)

1/2 cup whipping cream

6 ounces lox, cut into 1/2 inch pieces (aka smoked salmon) 

1 lemon, zested (no juice)

2 tablespoons olive oil

2 cups packed arugula

1 garlic clove, minced

1/2 teaspoon salt

1/2 teaspoon pepper

Directions

Preheat the oven to 350 degrees

In a medium bowl, whisk the egg whites until fluffy, about 30 seconds. Add the cream, lox, lemon zest, salt and pepper

Spray a 10 inch, nonstick, ovenproof skillet with cooking spray. Turn the stove to medium heat and heat the oil in the pan. Add the garlic. 30 seconds later, add the arugula and cook, stirring frequently, until it wilts

Pour the egg mixture into the pan and stir to combine the ingredients

Cook, without stirring, for 4 minutes

Transfer to the oven and bake until set, about 10 to 12 minutes

Slide the frittata onto a platter. Using a serrated knife, cut into wedges

Enjoy warm or at room temp!
